If you haven't ever tried the "best Vietnamese soup in town," you're in for a real treat. Pho 79 gets its name from the "national noodle soup" of Vietnam (also called pho), which is a fragrant, spice-infused soup made primarily with beef and rice noodles. Common seasonings used in this soup include chiles, basil, cinnamon, and star anise. The soup base is similiar to a French consomme. Reputedly, named after the French pot-au-feu, the soup moved to Saigon with Catholic refugees in 1954 and then came to America with the first wave of South Vietnamese refugees in 1975.

Curries are also used in Vietnamese cooking, but they are less spicy than Indian or Thai varieties. Coriander is very commonly used to season--chili, on the other hand, is used in very small quantity. Spring rolls are an adaption from Chinese cuisine. However, in contrast they are not deep-fried, and are prepared largely without fat. The Vietnamese prefer seafood over meat, using an abundance of shrimp. One aspect of Vietnamese food is a very tasty fish sauce called "nouc mam" that is added to many dishes and used as a salad dressing.
